The inclusion of Kithul Madeema spotlights a time-honoured, indigenous method practiced in rural Sri Lankan communities. 'Kithul tapping' or 'Kithul madeema' is central to the daily life and economy of rural Sri Lankan villages. It is filtered and boiled for several hours to produce kithul treacle, often called kithul honey.
